マタタビ果実のビタミンC含量を測定したところ、イチゴやキウイフルーツ果実よりもずっと高い値を示した。マタタビ果実の水抽出液にはアスコルビン酸やトコフェロールと同様の抗酸化活性と活性酸素消去能を示し、さらにアンジオテンシンI変換酵素阻害活性も有していた。

キャベツ葉、ピーナッツ種子および土壌より分離した微生物ホスホリパーゼDを精製し、その酵素性状とcDNAをクローニングし、DNA塩基配列を明らかにした。それら酵素ならびにリコンビナント酵素の性状を比較した。新たに分離した微生物の生産する酵素を用いて希少リン脂質生産の向上に成功した。(博士論文)
